Hey Friends! How is it that moving from spring into fall always tends to make me in the mood to bake? I have been in the mood to bake the best simple soft and chewy cake box cookies. This recipe is insanely simple, just made with a few ingredients including boxed cake mix. You guys, these delicious cookies come out so soft, so chewy, and perfectly sweet. Every buttery bite will have you thinking about which cake mix flavor will be perfect for the up coming holidays.

Ingrediants You’ll Need:
1 boxed cake mix of any flavor you like
2 eggs
1/3 cups of oil
STEP 1: in a large mixing bowl add your boxed cake mix
- TIP 1 I used a KitchenAide stand mixer but a hand mixer will work just fine
STEP 2: add in your eggs and oil
STEP 3: mix until there are little to no clumps – if you are using a stand mixer, mix on low setting
- TIP 2 If you use a stand mixer the paddle attachment works better than the whisk
STEP 4: (optional) mix in desired add-ins until evenly combined- chocolate chips, sprinkles, nuts, etc
STEP 5: line with parchment paper or spray your cookie sheet if you do not have a silicone mat for your pan
STEP 6: using a tablespoon take two scoops worth of cookie dough and place on to cookie sheet until mix is gone – making sure they are about 2 inches part from each other on the cookie sheet
- TIP 3 Use an ice cream scoop to scoop your cookies evenly in size
STEP 7: once your cookie sheet is filled place them in the oven at 350F for 15-20 mins or until lightly golden brown at the edges
STEP 8: Leave them to cool on a cookie rack
