What you’ll need:

1 can black beans

1 can red kidney beans

1 can white beans

1 can corn

1 can tomato paste

1 red onion

1 lb ground beef.. ground turkey is delicious too

1 can Rotel – original tomato and green chili pepper

1 tsp nutmeg

1 tbsp garlic powder

1 tsp cinnamon

1 tbsp chili powder

shredded cheese

sour cream

chick broth

optional – I add a little bit of the juice from Trader Joes Hot & Sweet Jalapeños for added flavor and the tiniest bit of heat

Simple 30 minute homemade chili

STEP ONE: drizzle olive oil on the bottom of your pot (linked mine here) and pop in your chopped red onion

STEP TWO: add in your ground beef (or turkey) and tomato paste. Mash it around a bit and add in salt and pepper. Then add in your chicken broth.
Tip: wooden spoon works the best as you can scrape the bottom of the pot without ruining your cookware

STEP THREE: add kidney beans, white beans, corn, and black beans. Stir around and add in can of Rotel

STEP FOUR: according to your taste preferences add in the chili powder, onion powder, garlic powder, cinnamon, and nutmeg tasting every so often

STEP FIVE: bring to a boil then lower heat to simmer, leave to simmer until beans are fully cooked

Tip: alternate lid on and off to keep from being too watery or too thick. If you want to reduce the liquid then keep the lid off but if you want to keep the liquid as is then cover your pot. This is typically when I would add in the hot and sweet jalapeño juice if too thick.

STEP SIX: scoop into your favorite bowl and top with shredded cheese of your choice and sour cream
